Key Responsibilities

This is a hands-on role supporting the Head Chef to ensure the kitchen runs smoothly. You will:

• Lead and motivate the kitchen team during service
• Ensure food is prepared, cooked, and presented to high standards
• Showcase your knowledge of West African cuisine, ingredients, and techniques
• Take responsibility for your section, maintaining quality and consistency
• Maintain excellent standards of hygiene, health & safety, and cleanliness
• Assist with menu development and innovate where possible
• Manage stock levels, orders, and rotation, controlling wastage
• Train and support junior team members
• Lead the kitchen during the Head Chef’s absence
• Work collaboratively with front-of-house staff to deliver efficient service
• Help maintain food costs and labour targets
• Follow A procedures and company policies

What we’re looking for

The ideal candidate will have:

• Previous experience as a Senior Sous Chef, Sous Chef, or strong Junior Sous Chef in a busy restaurant environment
• Experience working in high-volume kitchens
• A genuine passion for West African cuisine and flavours
• Strong cooking skills and understanding of kitchen operations
• Excellent leadership, motivation, and communication abilities
• Calmness under pressure and a hands-on approach
• High standards of cleanliness, organisation, and food hygiene
• Attention to detail and consistency
• A positive attitude and a willingness to support and develop the team
